Easy Crock-Pot Vegetable-Lentil Soup 

(makes 12 servings)                                                                      

1 bag red lentils

4 cups butternut squash, cubed

1 cup chopped celery

1 cup chopped carrots

1 cup chopped onions

1 TBSP minced garlic 

1 teaspoon dried basil

1/2 teaspoon dried thyme

1 TBSP dried parsley

2 bay leaves

4 cups vegetable broth

1 can (14 1/2 oz.) diced tomatoes 

1 cup dry brown rice (cook prior to serving)                                                                                     


Rinse lentils.

Prepare vegetables

(For ease, I use a food processor to chop carrots, celery, onion).

Add all ingredients (except rice) to crockpot and cook on low 6-8 hours.

Prior to serving, prepare brown rice according to preference.

Serve and Enjoy!

Nutrition Facts: Excellent source of beta-carotene, vitamin C, fiber,  potassium and folate with plant-based protein. 

1 cup: 177 kcalories, 10 gm protein, 35 gm carbohydrate, 1 gm fat, 9 gm fiber, 312 mg. sodium, 655 mg potassium.
