The vegetables are full of fiber, vitamins and infection fighting properties to help keep you and your family healthy. Roasted Tofu and Veggies

This roasted tofu and veggie dish is not only easy to make, it is also easy on the budget. All you need is tofu, veggies of your choice and spice for taste. The beauty of this dish is that you can get creative and use any veggies that you would like, some fan favorites are peppers, sweet potatoes, brussel sprouts and broccoli.  Top it off with any spices or oil that you would like. This is great for a new year dish to start off a fresh year with new goals on your health and wellness journey!

Easy Leftover Produce Salad

This is a great recipe as well, it is great when wanting to throw together a delicious salad for the family, whilst also on a budget. Any type of lettuce base (kale, spinach or romaine lettuce) with a protein (quinoa, beans, or leftover cooked meat), veggies (carrots, celery, cucumbers, or peppers) and dash it off with a low fat dressing (vinagarette, oil, or apple cider vinegar).
